Bengali/Indian Limeade
The Bengali Limeade aka lebur jol, is something that calls my name during these rather hot summer days.
This is good news is that a lot people swear by the indigenous Bengali fragrant lime called Gondhoraj to make their limeade. I make do with what I have on hand. Chances are I am not seeing a Gondoraj anytime soon. The Gondhoraj is a kafir lime, and the closest thing I find in season is the Meyer Lemon.
Now for me, any essential lime will do. I just need that refreshing light freshly squeezed goodness. This is where something like that Costco bag of limes come in handy.
My Bengali/Indian Limeade Story
Essentially, there is not a lot of drama about this simple creation. At least, the way I make it. The only essential is ensuring a lot of the fresh pale green lime juice. When I have time, I squeeze a few limes and infuse fresh mint leaves. This forms a deep mint scented concentrate.
This fragrant concentrate is great for a refreshing cooler. However, it is great to just add sugar, a pinch of salt, water and lots of ice. Interestingly, this ice was different.
Chill and Chilling
Growing up, we refrigerated water to chill it, rather than using ice cubes. With this limeade, however, ice is key. The chinking, the condensation around the glass, and the pale green cooler all add to the nostalgia. It is one of the few vestiges of a season (that I am not still a huge fan off) that is not my favorite. It is not necessarily down time, especially with all the stuff that the high schooler and the about to be high schooler are getting into.
All times of the day, especially in the evening there is however time for this simple refreshing cooler. Especially this summer, where things feel so disconnected, I need this in my life. And here is the recipe for you. Other recipes to help you beat the heat include chilled soups, like this chilled beet and this chilled cucumber soup.
A simple sweet and salty limeade, that is one of the joys of summer.
Ingredients
- 4 limes
- a few mint leaves
- 1/2 teaspoon salt

Who can resist the simple but so cooling refreshing and delicious limeade? I cannot. After seeing so many posting recipes of drink, I had to make it to take care of my craving. And it was snowing outside! In Mombasa we get a lime so similar to Gondhoraj. It definitely has a unique taste, a bit sour and subtle sweetness.

Mayuri: So jealous, we do not get anything close by. If I search in local stores I sometimes find something similar.
