Seriously Good Avocado Pesto Pasta
Not a lot of time goes by before I discover another great pasta dish done in the instant pot. And this one uses a no cook Avocado Pesto sauce. We love avocados in this house, as in this guacamole, as in this deconstructed guacomole salad. Well you get the idea! The “pesto” here is really a seriously good, no cook sauce. Other than the lime, garlic and avocados the other ingredients in this easy dish is very negotiable. I have seen many variations of similar avocado no cook sauces, I just could not believe how easy this is put together.

Now, making the pasta in the instant pot works well. Because, like my other instant pot pasta dishes, this one uses some of the pasta cooking sauce to create and thin the pesto. You can definitely make the pasta on the stove top. In which case you will need to reserve about 1 cup of the cooking sauce.
And the pesto packs a lot of that punch just from the fresh garlic. Just as a note, we do like things rather garlicky in this house. However, if that is not quite your thing you might want to tone down the amount of garlic to one garlic clove. And believe you me, when I tell you that this pesto is satisfying and rich, I mean satisfying and rich. I had planned to add some cheese on top. But, once mixed in the creamy satisfying pasta looked so green, creamy, and satisfying I figured why mess with perfection.
This is perfect for some of the hot weather days coming our way. It looks like this is soon going to be time for instant pot cakes as well. An insanely easy and seriously good avocado pesto pasta done with a no cook sauce.
Ingredients
- 8 ounces of any dry pasta (I have used thin spaghetti for this recipe)
- 2 avocados
- 2 cloves garlic
- 1 jalapeno
- 3/4 cup chopped cilantro
- 1/2 cup chopped chives
- Salt to taste
- 3 tablespoons fresh lime juice
- 1/4 cup of water
- Chopped tomatoes to garnish
Instructions
- Place the pasta with 1 and 1/2 cups of water and salt in the instant pot. Set to 2 minutes of pressure and do a quick release after 3 minutes.
- While this is cooking, peel and seed the avocado and place in the food processor. Add in the jalapeno, cilantro, chopped chives, lime juice and the salt. Add in the water and process until smooth.
- Place the pasta with the cooking liquid in a mixing bowl. Add in the prepared pesto and toss well.
- Serve garnished with chopped tomatoes.
