Meyer Lemon Spinach Ricotta Pasta and Ironic Iron Hoopla

Lemon Spinach PastaThis 15 minute Spinach Ricotta Pasta, done fairly quickly in the Instant pot ( or frankly any pot of your choice) is a winner. I would say that it is made entirely of pantry staples, except, let us face it, my pantry is not your pantry.

My Spinach Ricotta Pasta Story

Ours is a tiny house, bursting in the seams, full of robots, books and all things food. My so called pantry actually is a pretty large part of the house. It is still usually bursting in the seams with legumes. Then there is lots of legumes, packs of pomi, pasta, spices and nuts. Well, this post is about the 15 minute pasta recipe that the kids loved.  The last four days, I have been trying to figure out the mysteries of dropping hemoglobin. The mystery remains a mystery at least for now. But there is a lot of spinach and greens in my future. Fortunately, it is something that I actually like eating.

In general, I have also been feeling rather exhausted. My coping mechanism as usual, is to try to pack in some sleep. Which means, I plan on bumping up my bedtime by an entire two hours. I am not sure how sustainable this will be, but, I will try.

Spinach Ricotta Pasta

I had generally been feeling a little out of sorts, the daughter has been very concerned and caring. She still has her moods, but, sometimes these days I do get the glimmer of the person she might be growing up to be. A thoughtful, somewhat reserved but very kindhearted lady. Of course, every time I step back and relax, the teenager returns in full gusto reminding me that my work is far from over. I suppose, motherhood is a job one can never really retire from. To that here is the pasta that seemed to win the young lady over.

Meyer Lemon Spinach Ricotta Pasta (instant pot or stove top)

Prep Time: 2 minutes

Cook Time: 15 minutes

Total Time: 18 minutes

A light and quick pasta inspired by the freshness of spring.

Ingredients

  • 4 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 small carrot, very finely diced
  • 8 to 10 ounces dried pasta, such as penne
  • 1 teaspoon salt
  • 2 tablespoons sour cream or Greek Yogurt
  • 1/2 cup ricotta cheese
  • 1/4 cup Meyer lemon juice (about 2 Meyer lemons) or 1 regular lemon
  • 1/3 cup grated Parmesan
  • 1 cup finely chopped baby spinach
  • 1 cup finely chopped arugula
  • 1 tablespoon freshly ground black pepper

Instructions

  1. Turn your instant pot onto saute mode and add in the garlic. Heat the oil and add in the garlic and gently allow the garlic to turn pale golden. add in the carrots and mix well.
  2. Add in the pasta and 2 cups of water and the salt.
  3. Press cancel and turn the instant pot on pressure on low for 2 minutes. Release the steam after 3 to 4 minutes.
  4. Ope the lid stir well and turn back onto saute mode.
  5. Working quickly add in the sour cream, ricotta cheese and the lemon juice.
  6. Stir in the Parmesan and mix well. Stir in baby spinach and arugula and let the leaves wilt. Turn off the saute mode. Serve with freshly ground black pepper.
  7. Note: To do this on the stove top, first boil the pasta for about 6 minutes. Reserve 1/2 cup of the water.
  8. Continue with the recipe, add in the pasta and water after the garlic has been cooked.
