Ginger and Garlic Cubes – Freezing Indian Spices
I often buy what I call the “culinary trinity” in Indian cooking in large amounts. The culinary trinity that I speak of is the trinity of onions, garlic and ginger. I find the best way to prep these is by finely chopping and then freezing in ice cube containers. You can also use a blender to make a paste and do the same thing. Ginger and Garlic cube are one of those masala hacks that save my life many times over. Let us talk about 4 variations to do this and some ways to use them.
Once upon time, I use to mix garlic, ginger, and onion and freeze them together. I have since learnt, having a few individual cubes help. So here are the 4 variations I like.
- Single flavor ginger, garlic, and onion cubes.
- Ginger and Garlic together
- The three good buddies all together
- Ginger, Garlic, Onion and Green chilies together.
Now, why can you not buy them from the store, in jars.
The commercial variety often contains some preservative usually sodium benzoate has been added.
Now while this is too simple to be called a recipe, I have outlined the process for you.
How to use the Ginger and Garlic Cubes?
You can use the ginger cubes in a good cup of spice tea. All of them can be adjusted and thrown in to make a good make ahead masala.
Almost any Indian recipe requires ginger and garlic in certain proportions. They are forgiving and you can use these cubes on most curries.
Honestly, however, they are just handy to have around. Ginger and Garlic are versatile. They are the Indian culinary du0. But, if you work with any kind of flavor-based cuisine. Make that Asian flavor-based cuisine. Odds are you start your prep with chopping and prepping ginger and garlic. So, next time do it in bulk, you will be good to go for a few days.

A simple way to make ginger and garlic paste ahead of time and freeze in ice cube trays.
Ingredients
- 1 cup peeled garlic pods (about 10 cloves of garlic)
- 1 pound of ginger, peeled
- 1 medium sized ice cube tray
Instructions
- Place the ginger and the garlic in a blender and blend into a paste with a little water.
- Place the paste into the ice cube trays and freeze.
- Alternately, mince individually using a food processor and store.
- Once they are frozen, you can remove and store in zip lock bags and use as needed.
