Deepta’s Guacamole with toasted peanuts
A post about Guacamole, or Deepta’s Guacamole should have been up and posted and I should have been in bed by now, especially since this is such a basic recipe. But then again Deepta’s guacamole is special.
The Story of Deepta’s Guacamole
However, I fussed and played around, almost reaching countdown to bed time.
It is a good thing that the simple and essential guacamole is such a wonderful and satisfying creature. My daughter loves it, and we have to have it at least once on most weekends. Her baby food all grown up.
It is a perfect food for a baby really, smooth and comforting. Did I say nutritious?
My guacamole is sometimes plain and simple and sometimes I add crushed peanuts to the mix.
My daughter loves avocadoes. Probably because it is one of her first essential fruits. Now, with a guacamole, it is really a perfect celebration of this delicate fruit. A guacamole does not need lots more than soft and ripe avocados. In fact, irrespective of the version that is a nonnegotiable ingredient.
What Makes this recipe Special?
This version adds in crushed peanuts. Crunchy and nutritious, the peanuts add an interesting crunch. The concept is similar to adding Bacon to Guacamole, but without all the salt and added fat. Needless to mention I use unsalted peanuts for this purpose. I have sometimes also added in toasted cumin seeds, for additional. flavor.
How to Enjoy Deepta’s Guacamole
Honestly the same way as any other dip. It is a great candidate to pair with any recipe that needs a pleasing side. Think of Broccoli, Spinach and Red Onion Quesadillas. It is great with a chili or a meal of simple black beans. Top the black bean soup with this and last but not the least use it for masala nachos for extra crunch and flavor.
