Turkish Eggs for a wholesome meal

A somewhat relaxed Sunday after a while giving me the perfect opportunity to create this post for Sabra Hummus for their recipe contest with recipe redux. Turkish eggs are a comforting take on saucy spicy eggs.

Back after a trip to Detroit, I am happy to welcome a bunch of humus samples. Turkish eggs are an amazing meal any time of the day and today it is our Sunday lunch.

My Turkish Eggs Story

These eggs are cooked with onions, garlic, tomatoes and dollops of yogurt and hummus. My flavor choice for this recipe, from the dozen assorted flavors was the roasted red pepper hummus.  This  complemented the lovely tart and well seasoned flavors of the dish. Served perfectly with crusty toasted bread this meal is comfort food made wholesome.

Turkish Eggs with Yogurt and Hummus

With all the flavors packed in this creation, it works well even without the egg, as hummus is a perfect plant based protein. The general creamy depth of flavor allows you to feel satisfied without adding loads of extra richness to the meal. Between her bout of self professed allergies, my daughter keeps talking about how food is healing. At least, so she says I personally believe that this is a cold. She has her first AP exam tomorrow, how time flies.

Turkish Eggs with Hummus and Yogurt

Almost everything else is calm and quite. This evening promises to be a busy one. Paying for the sins of sleeping in on both the weekend mornings. My largest indulgence. I also went Indian spice shopping today, I am a happy camper. This workhorse eggs for dinner dish has a lot of potential, I would not rule out topping it with slices of fresh avocado.

Turkish Eggs with Hummus and Yogurt

Next week comes with its usual action packed routine and of course mostly delicate spring like weather.  The tulips did not live through the crazy swing temperatures. I personally am not very excited at the prospect of this shortened spring. But for today, this indulgent protein packed dish will do.

Turkish Eggs with Hummus and Yogurt

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Yield: Serves 4

A lovely wholesome comforting dish that works well for any meal of the day.

Ingredients

  • 4 tablespoons extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 medium sized onion, finely chopped
  • 1 teaspoon freshly ground cumin
  • 1 tablespoon smoked paprika
  • 1/2 cup crushed canned tomatoes
  • 1 teaspoon salt
  • 1/4 cup hummus (I used Sabra Roasted Red pepper hummus)
  • 1/4 cup Greek yogurt
  • 4 eggs
  • Chopped cilantro to garnish

Instructions

  1. Heat the oil in a large skillet and add in the garlic and onions and saute until softened. This would be for about 4 minutes.
  2. Add in the cumin and the paprika and the the tomatoes and mix in the salt.
  3. Gently add dollops of the yogurt and the hummus. This should be done in clumps and not mixed in.
  4. Carefully crack in the eggs in the four corners of the skillet.
  5. Cover and cook on low for about 10 minutes. The whites should be well cooked with soft centers for the yolks (an over-easy consistency).
  6. Sprinkle with the cilantro and serve with bread if desired.
