A Little Bit About Mustard Seeds
I had made this with a mustard tempering. The mustard oil gives this a very distinct flavoring. If you do not have mustard oil handy, use EVOO and add in about a 1/4 teaspoon of yellow mustard to get the flavors.
Mustards seeds are used for seasoning in a variety of ways across India. On the Bengali table, we make a paste with mustards seeds. In North and South India, they are used whole. When toasted in oil, mustard seeds acquire a beautiful nutty flavor.

Zucchini Seasoned with Mustard Seeds
A gently seasoned stir fry with zucchini and mustard.
Ingredients
- 1 tablespoon mustard oil
- 1/2 teaspoon mustard seeds
- 1/4 cup diced onion
- 1/2 teaspoon turmeric
- 1 teaspoon sea salt
- 2 zucchinis, cut into a medium dice
- 1 tomatoes, finely diced (optional)
- Chopped cilantro to garnish
Instructions
- Heat the oil and add the mustard seeds and wait till they crackle.
- Add in the onion and saute for about 4 minutes until the onion is beginning to turn a very soft share of golden.
- Mix in all the remaining ingredients and cook for about 4 minutes, until the zucchini is soft and cooked through.
- Sprinkle with chopped cilantro and enjoy as a flavorful side.
