Bengali Aloor Dom (Instant Pot)
Aloor Dom or whole spicy Bengali potatoes is as iconic as it is simple and unblemished with complicated processes and unusual spices. It is however an assertive creation and the spices are nuanced and profound. There are many variations such as the one on this site or a different one in Bengali5Spice. Today’s variation is done easily in the instant pot, is distinct in its use of garlic and yogurt. Soy or Coconut yogurt can be use to keep this vegan.
I had made this last weekend and thought it perfect for breakfast fare. Especially if you are game for making loochis – the perfect delicate puffy breads. Loochi with a good aloor dom is Bengali nirvana. Assuming potatoes are a staple in your pantry, try this if you are looking for something different for your brunch table. Honestly, still time with your instant pot to get this going if you are cooking for mother’s day. I have plans to add ganache to a cake that I made for the chocaholic brood. Other than that, no other cooking plans. Just because, it happens to be working out that way. Another crazy week filled with lots of numbers, 990’s to be specific.
Of all the viewing options, when I search for a wild card, I look for movies on Amazon Prime. Call me crazy, but I have found some unusual movies. Not bad unusual at that. Stuff that I do not see advertised or even available in other places. And ever so often, once in a while I find a movie that I had forgotten about. All things considered, I love the rainy calmness of today’s weather, just my kind of gentle rain. I would love to stay up all hours tonight, but I can bet my last dollar that my son will be awake and ready to wake me up as soon as he possibly can. That is motherhood – predictable, intense and nuanced!

A classic Bengali recipe for Aloor Dom (whole spiced potatoes) made easy in the Instant Pot..
Ingredients
- 1/4 cup oil
- 2 to 3 bay leaves
- 1 teaspoon red cayenne pepper
- 1/2 teaspoon turmeric
- 1 medium sized onion, minced
- 4 cloves garlic, minced
- 10 to 12 small whole potatoes, peeled
- 1/2 cup yogurt beaten
- 1 teaspoon powdered cumin
- 1 teaspoon powdered black pepper
- 1 teaspoon sugar
- 1 teaspoon salt or to taste
- 1 teaspoon garam masala
- Chopped coriander to garnish
Instructions
- Turn the instant pot on and set to saute mode.
- Add in the oil and heat for 1 minute and add in the bay leaves, cayenne pepper and the turmeric, followed by the onion and garlic.
- Saute for about 3 minutes and add in the potatoes and coat. Add in the yogurt. Turn off the heat and add in the cumin, black pepper, sugar and salt and stir well.
- Add in 1/4 cup of water. Cover and pressure cook for 4 minutes. Release the pressure after 5 minutes.
- Remove the cover and mix well.
- Stir in the garam masala and the coriander leaves. Enjoy with your favorite Indian flatbread.
