Chili Pork with Hoisin Rice NoodlesThe non-plant based protein selections in this house mostly consist of fish, seafood (read shrimp), and chicken. However, very infrequently lamb and pork will find there way into things. Often when testing new recipes. Today’s Chili Pork and Hoisin Rice Noodles is one of those deliciously infrequent occasions. A result of my realizing that I had some pork tenderloin lurking in a corner of my refrigerator. I meshed this with a spicy sauce with a good dose of Hoisin sauce and the result is quite magical. A little bit of thick and sweet Hoisin Sauce can be quite magical. Almost enough to sweeten some of angst and challenges that seem to be surrounding us.

About this Chili Pork and Hoisin Rice Noodles

There are very few noodles in this mélange. The base for this recipe is prepared the instant pot. As for the vegetables, I have added a mixture of red bell peppers and mushrooms. And the rest of this is very basic stuff. about five to six ingredients.  All what I have out and about in my pantry staples. The mushrooms in this recipe do a lot for enhancing the deep flavor.

A few tips and suggestions,

  • To keep this recipe gluten-free make sure you are using both tamari and tamari based hoisin sauce.  (I do this as a default, just to keep my recipes flexible).
  • Do not over do the amount of rice noodles in the recipe.
  • This can be very easily adapted for the stove top by just covering and simmering the meat and vegetables.
  • Do not try cooking the rice noodles, the softened noodles stirred into a piping hot sauce is enough to cook these noodles through.

I want to also emphasize that this is a semi-recipe. In other words, stick to the seasonings and play with the other ingredients to suit your pantry and ingredients on hand. Chili Pork and Hoisin Rice Noodles

Ingredients

  • 2 tablespoons of oil
  • 1 tablespoon of minced ginger
  • 1/2 tablespoon red pepper flakes
  • 1/2 pound pork tenderloin, cut into thin strips
  • 1 red bell pepper, cut into 1 inch strips
  • 1 cup of shitake mushrooms halved or quartered
  • 1 tablespoon tamari sauce
  • 1 tablespoon hoisin sauce
  • 2 tablespoons cooking wine or sake
  • 2 ounces (about 3/4 cup cooked) rice noodles
  • Chopped scallions and sesame seeds to garnish

Instructions

  1. Turn the instant pot on to saute mode and add the oil.
  2. Add in the oil and add the ginger and red pepper flakes. Add in the pork and the red pepper strips and the mushrooms.
  3. Stir in the tamari sauce, hoisin sauce and cooking wine. Mix well to ensure that nothing is sticking to the bottom of the instant pot.
  4. Cover and set the instant pot to a minute of cooking time. Release the pressure after 10 minutes.
  5. In the mean time soak the noodles in warm water for about 5 to 7 minutes.
  6. Drain the noodles and stir into the pork and vegetable mixture.
  7. Garnish with the scallions and the sesame seeds and serve.
