Roasted Broccoli and Cauliflower with Ginger, Garlic and Lime

Roasted Broccoli and Cauliflower What a crazy, busy, productive week! Earning my weekend is always fun. Roasted Broccoli never fails to deliver.

Here is a well seasoned Tangy Roasted Broccoli and Cauliflower. It works perfectly in any air fryer or a sheet pan. A successful mid-week idea, that we believe is a keeper. Try it and you will see why.

The few drops of mustard oil used in this creation is a good idea. No mustard oil, no problem. Drizzle on olive oil.  Garlic and olive is never a bad idea! In this case, garlic and ginger.

The larger capacity air fryer basket is great as it fits in a large batch and allows enough room to char and cook the broccoli and cauliflower.

There is dal going on in my instant pot. This lovely cauliflower and broccoli medley is our new favorite thing. I love this green and white partnership. In this case the turmeric gives the cauliflower a golden color. The air-frying cooks both the broccoli and cauliflower to crisp and delightful perfection.

Tender crisp with just the right amount of char. Now if you do not have an air-fryer, increase the amount of oil and roast this at 400 degrees in the oven. It is that kind of unfussy dish.

About the Flavors and Seasonings

The seasoning for this is very basic – turmeric, minced garlic, ginger, salt, crushed red pepper and that magical thing called amchoor or dried mango powder.

It adds a gentle tang to things. I like the fact that it is dry and can be rubbed onto something being roasted.  This said, a good squeeze of lime to finish will do the trick as well. This is one of those stupid easy dishes that are bursting with flavor.

It is my kind of dish, as it works well with almost anything. In fact, my home crew eats this by itself as a snack.

A single serving gets done in about 15 minutes, prep time and all.   The hot summer continues in our neck of the woods. I am mulling about what to cobble up with watermelon and cucumber. They sound like the perfect couple for this time of the year.

Tangy Roasted Brocolli and Cauliflower (Air Fryer)

Prep Time: 5 minutes

Cook Time: 25 minutes

Yield: Serves 4 to 6

Tangy Roasted Brocolli and Cauliflower (Air Fryer)

A gorgeous well seasoned super easy take on air-fried caulfilower. This recipe can be done in an oven too!

Ingredients

  • 3 cups chopped broccoli florrettes (about 3/4 pounds
  • 1 cups chopped cauliflower (about 1/4 a medium sized caulfower
  • 1 tablespoon oil (mustard of olive oil
  • 1 teaspoon crushed red pepper
  • 1/2 teaspoon turmeric
  • 1 tablespoon minced garlic
  • 1 taspoon minced ginger
  • 1 and 1/2 teaspoon amchoor powder or juice of 1/2 lime
  • Sesame seeds to finish (optional)

Instructions

  1. Toss the cauliflower and broccoli with the oil, crushed red pepper and turmeric.
  2. Add in the ginger and garlic.
  3. If adding the amchoor powder add it at this time, if using lime juice, hold off at this time.
  4. Place in the air -fryer basket. Set to 375 degrees and cook for 10 minutes, you might want to shake things once after 7 to 8 minutes.
  5. Turn the temperature up for 475 degrees and cook for another 10 times.
  6. Remove from the air fryer basket place in a mixing/serving bowl. Sprinkle with salt and if using lime juice, squeeze in the lime juice.
  7. Sprinkle with sesame seeds if using and serve immediately.

Notes

If using a sheet pan, add 2 more tablespoons oil and roast at 425 degrees for 25 minutes.
