Watermelon Radish Toasts and Kids Patch
In the spirit of teach a person to fish. You have, “teach your children to garden”. And you will have watermelon radishes. And then convert them into watermelon radish toast. These crisp toasts topped with radish and creamy cheese spread make a great light meal. They are great for breakfast or lunch. I love the colors that the watermelon radishes add. However, French Breakfast radishes or even cherry bells work just fine. The only requirement is that the radishes need to be very thinly sliced.
We had forgot about the kid’s garden spots and they actually have grown quite a bit. Mostly busy tending to the rest of the garden. It has been a great way to keep them gainfully engaged. Fussing about their little lots while my husband tends to the rest of the garden. Of course, to get the plot to really blossom some “adult finishing” has been needed. Voila, today I get watermelon radishes.
Actually, in their first iteration they were muddy and unimpressive. I had a very eager dad and 4 little eyes watching my reaction. Once I washed the radishes, they almost reminded me of white mice, but I persisted. The kids told me they had grown them for me. I have never seen watermelon radishes until today. And OMG what have I missed. I am in love!
Falling in Love with Watermelon Radish
Fragrant and crisp like radishes. And brilliantly colored like watermelon. Nature is an amazing artist. And then I cut a few more slices. I popped these in my mouth. They start out sweet and then fill my mouth with a sharp and spicy finish. It is a new taste for me, just like when I tried Purslane for the first time. To mellow out their sharpness a toast is born.
In this the radish is gently marinated in lemon juice. It imbues the radish with a beautiful fragrance and gentle tang. And then the toast. It gets two kinds of cheese. But with a light touch. All of this is put together. We love this toast. And yes, the kids like them too. And folks watermelon or not, give this toast a try.
We loved the sandwiches! The good thing with kids actually participating in the production exercise is that they are more eager to sample the “fruits” of their labor. This is actually a common experience.
